Fatit Hommus
(Chick Peas with Yogurt)
A simple dish common to the Middle East. Ingredients include:

2 cups chick peas
ready for use and drained.

3 pita bread slices
cut small and fried in vegetable oil until browned.
-
5 cups plain yogurt.
-
1 cucumber sliced
into very thin slivers.
-
2 tablespoons
vegetable shortening.
-
Half a cup of pine
nuts.
-
1 tablespoon of
garlic, crushed. Salt, cumin and Pepper.
-
1 tablespoon of
mint.

Directions:
-
Mix garlic, salt, pepper, cucumber and yogurt well.
(You may add lemon juice to taste)
-
Fry pinenuts in the shortening until brown.
-
Simmer the Chickpeas in garlic, salt, pepper and a
little cumin until done.

Put a layer of the pita bread pieces that have been
fried in a large pan. Add the chickpeas over top then spread the
yogurt over top of that. Garnish with pinenuts and mint.
-
Serve right away.
-
For a variation add boneless chicken chunks simmered
with the chickpeas and the/or a vegetable of your choice.
